It's not that hard to make, but it is time consuming. You have to stir more-or-less continuously for about an hour. 			<description><![CDATA[ I've always hated minestrone, until I finally found this recipe and I love it. It's easy and you only use one pot, so not much washing up. It tastes equally good reheated so I usually make a lot of it.
